Looking for a new easy crockpot recipe? Not only is this one stupid easy, it only takes three ingredients and you can freeze the leftovers for meal prep!
This is my go-to dinner option when I’m short on time during the day. I take 5 minutes to dump everything in my crockpot before heading out for the day and come home to my house smelling AMAZING and dinner ready to go!
When I first tried this recipe I was worried about not adding extra liquid to the crockpot (I was still a beginner with crockpots). But it totally works!
Between the frozen veggies and frozen chicken there ends up being plenty of liquid. Trust me on this one – as long as their frozen you will NOT want to add additional liquid.

Here’s a few things I use for this recipe:
My Crockpot – I searched high and low for this specific crockpot that allows you to program the time you want in. So much better than being stuck to the standard 4 – 6 – 8 hours when you’re doing something different.
Frozen bag of Pepper and Onions – we’ve tried a few but it seems like these longer strips from Walmart do the best overall. I use about half the bag for a few reasons.
1. It lasts longer
2. My husband isn’t a huge fan of veggies so I still have to hide them LOL

Crockpot Chicken Fajitas
Equipment
- CrockPot
- Forks (to shred meat)
Ingredients
- 1 lb Lean Chicken Breasts (Frozen)
- 1 bag Frozen Peppers & Onions (Great Value is the best)
- 1 pkg Fajita seasoning
Instructions
- Dump 1/2 bag to a whole bag of frozen peppers and onions into the base of your crockpot.
- Add the frozen chicken breast(s) on top of the peppers and onions.
- Sprinkle the Fajita seasoning all over the top of the chicken and veggies.
- Cook on low for 6-8 hours or high for 4 hours.
- Shred meat prior to serving.
- Serve with torilla shells and your favorite toppings like cheese, sour cream, salsa etc.
- Meal prepping? Divide your portions and place in containers in either the fridge or freezer.
