One of our favorite meals is Swiss Chicken, however, it’s a pretty dairy-heavy recipe. This Lemon Butter Chicken recipe has a similar flavor but is dairy-free for a much lighter feeling meal.
I love how simple this recipe is and how easy it comes together.
This recipe is great for meal prepping too! Pair it with some veggies or toss it in a salad for a refreshing lunch.

How To Make Lemon Butter Chicken
In a small bowl, combine the Kodiak cakes mix, salt, and lemon pepper.
Butterfly cut the chicken and place it in a large bowl. Coat with the mix.
Heat a skillet to medium-high heat and add butter. Once melted, add chicken to the pan and cover. Cook for about 3-5 minutes per side until cooked through hand juices run clear.
Slice the lemons and add to the pan. Cook and flip continuously for 2-3 minutes.
Serve over rice or with your favorite vegetables.

- 12 oz Chicken Breasts
- 2 tbsp Kodak power cakes mix buttermilk
- 1 dash Sea Salt
- 1 tsp Lemon Pepper
- 1/4 cup Butter
- 2 Lemons
