In a small bowl, combine the kodiak cakes mix, salt, and lemon pepper.
Butterfly cut the chicken and place in a large bowl. Coat with mix.
Heat a skillet to medium high heat and add butter. Once melted, add chicken to the pan and cover. Cook for about 3-5 minutes per side until cooked through hand juices run clear.
Slice the lemons and add to the pan. Cook and flip continuously for 2-3 minutes.
Serve over rice or with your favorite vegetables.
