Lemon Butter Chicken

Ingredients

  • 1 cup Rice
  • 12 oz Chicken Breasts
  • 2 tbsp Kodak power cakes mix buttermilk
  • 1 dash Sea Salt
  • 1 tsp Lemon Pepper
  • 1/4 cup Butter
  • 2 Lemons

Instructions

  • In a small bowl, combine the kodiak cakes mix, salt, and lemon pepper.
  • Butterfly cut the chicken and place in a large bowl. Coat with mix.
  • Heat a skillet to medium high heat and add butter. Once melted, add chicken to the pan and cover. Cook for about 3-5 minutes per side until cooked through hand juices run clear.
  • Slice the lemons and add to the pan. Cook and flip continuously for 2-3 minutes.
  • Serve over rice or with your favorite vegetables.
