I’ve often struggled to come up with healthy lunch ideas, especially when I stopped eating bread.
Gone were the days of easy sandwiches. I thought I was stuck with salads forever!
But since then I’ve come up with variety of options that I like, and I’m still trying new things!
I like the routine of taking dinner leftovers as lunch. But that doesn’t always work out. Some dinners we make don’t make enough or leftovers or just don’t make great leftovers.
So when this happens I have a few lunches that I keep on hand to try together really easily.

It makes it easy to add a variety of foods to my meal. I also use these boxes for my bento box snacks! They’re really high quality and I’m never worried about them breaking. Plus, they’re cheaper than buying tin bento boxes.
