I’ve been trying to incorporate more meatless dinners into our routine and using beans instead.

We’ve been making this Chickpea Tikka Masala for a few months and loving it! We’ve been making it with chicken but I switched the chicken out for chickpeas a few weeks ago and it was Life Changing!
Not only is this meal super easy to throw together but it also makes FANTASTIC leftovers!
Aside from cooking the rice, which takes about 20 mins in our rice cooker, this dinner can come together in about 5 minutes.

Ingredients To Make Tikka Masala
It literally doesn’t get any easier than this. All you need is rice, chickpeas, and tikka masala simmer sauce.
It’s so easy and I keep all these things on hand for an easy dinner that I don’t have to think about.
For the chickpeas, you can use canned and rinse them. Or you can use dry chickpeas and soak them the night before.
I found the simmer sauce at Walmart, but have also found it in Smiths. You can probably find it at your local grocery store. Someday I’d like to make my own sauce, but it’s just so easy and yummy! Plus it comes in a great glass jar that I reuse for my pantry.
How To Make Tikka Masala
I’ll start some rice in my rice cooker before starting on the Tikka Masala. You can cook rice your preferred method if you don’t have a rice cooker.
I’ll rinse my canned chickpeas and add them to a warm fry pan.
Then I dump the bottle of Tikka Masala Simmer Sauce in the pan and stir until it’s heated through.
Some times I’ll cook some tortillas to add with it or add some veggies as a side dish.
Once the rice is ready we’re good to go!
It’s literally that easy!
