We love a good chicken taco, and I love a good crockpot recipe even more! I love when I can just quickly dump a bunch of stuff in a crockpot in the morning and come home to a hot meal ready to eat.
Tacos are a common dish in our house but I like finding ways to mix it up. I typically opt to use chicken over beef because it’s a leaner protein but that can get boring sometimes.
We’ve been making crockpot chicken fajitas for a while but when I saw this recipe I knew I had to give it a try.
I’m a sucker for queso so the idea of making a queso taco made my heart soar, and let me tell you this recipe did not disappoint!

How To Make Crockpot Chicken Queso Tacos
Place chicken in a single layer in your crockpot.
Sprinkle taco seasoning over chicken.
In a bowl mix together canned tomatoes, canned chilis, and chicken broth.
Pour mixture over chicken.
Cook on HIGH for 3-4 hours or LOW for 6-8 hours. Cooking time may vary depending on your crockpot.
After your chicken is done cooking drain the crockpot of excess liquid. I just use a ladle to pull out excess liquid.
Using two forks, pull the chicken apart to shred it.
Mix the queso in with the chicken until it’s coated. Let it cook in the crockpot for another 20 minutes or so to heat the queso through.
Serve with tortillas and with your favorite taco toppings!
What To Serve With Crockpot Chicken Queso Tacos
Tortillas: First off, if you haven’t tried tortillas that you cook you seriously need to. They will change your life! Once we tried them we’ve never gone back. You can buy these ones at Costco, Walmart, or pretty much any grocery store.
Topping Ideas: Shredded cheese, salsa, guacamole, sour cream, lettuce, tomatoes, olives, etc.
My Favorite Crockpot
I’m super picky with my crockpot. I searched high and low for a crockpot that would allow me to program a specific cook time and automatically switch to warm so I didn’t have to worry about switching it myself. Both my husband and I work full time so I like that I can set my crockpot to cook for 6 hours and then stay on warm until we’re ready. Here’s the link to the one we have if you have the same needs.

Ingredients
- 1.5 lbs Chicken Breasts
- 3 tbsp Taco Seasoning or one packet
- 10 oz Can Rotel Tomatoes with Green Chilis
- 4 oz Can Mild Diced Green Chilis
- 1/2 cup Chicken Broth
- 3/4 cup Salsa Con Queso
- Taco shells and your favorite toppings
