Avocado Toast is delicious, easy, and a great way to add healthy fats and protein to my diet.
It’s a staple in my house and I try to keep all the ingredients on hand for when I need a quick post-workout snack or even as a dinner when I’m craving it!
This is a really simple recipe and only takes me about 5 mins to whip up.

What Do You Need For Avocado Toast
For this recipe, I use eggs, whole wheat bread, guacamole, red pepper flakes, pumpkin seeds, and fried eggs.
I make my whole wheat bread or whole wheat English muffins about once a month. Then I just freeze the bread so I can always grab a few slices out when I want them. When I go to make some avocado toast I’ll just put a few slices in the microwave for about 30 seconds and then toast them.
For the guacamole, you can just use a plain avocado, make your own guac, or buy pre-made guac. I typically try to buy regular avocados to avoid plastic waste, but I find that they go bad before I get to them sometimes. So lately I’ve been keeping these guac cups ready in the fridge. I find it’s easier to throw these in a lunch or grab for a snack and they last a bit longer. My favorite brand is just the Walmart generic brand, but the Wholly Avocado Brand is great too!
For the pumpkin seeds, you can typically buy them in bags or small containers in the bulk foods section of your grocery store. I have a local plastic-free shop that will refill my glass jar with pumpkin seeds! That’s a great way to avoid more plastic waste if you have the option.
How To Make Avocado Toast
I start by frying my eggs on the stove.
While the eggs are cooking I’ll toast my bread.
When the bread is ready I’ll add my guac and then top with pumpkin seeds, red pepper flakes, and drizzle with olive oil.
Then I’ll top with my eggs! I didn’t include a picture with the eggs because it wasn’t really pretty LOL, but it’s delicious!
Avocado Toast with Fried Egg
Ingredients
- 2 Eggs
- 2 Slices Whole Wheat Bread
- 2 oz Guacamole (or 1/2 an avocado)
- 2 tbsp Raw Pumpkin Seeds
- Red Pepper Flakes
- 1 tsp Olive Oil
Instructions
- Crack two eggs into a heated fry pan, be sure to break the yolks. Flip the eggs halfway to cook both sides. Set Aside.
- Toast your whole wheat bread.
- Top toast with guac. Sprinkle on pumpkin seeds and red pepper flakes. Drizzle olive oil over toast.
- Top toast with fried eggs.
